drunken pineapple

This was a treat I made last summer at the cottage. Everyone munched on this throughout the week, put it in drinks, and at the end of the week we tossed what was left in the blender with some more rum…yum!

Drunken Pineapple

Ingredients:

  • fresh pineapple
  • 1-2 cups Malibu (or other coconut rum)

Directions:

  1. Core and cut pineapple into bite sized chunks
  2. Place in a shallow container and pour enough Malibu over top to cover the pineapple
  3. Place in the fridge overnight
  4. Enjoy as a happy hour snack, use to garnish a drink, or add it to sangria
